Chef Preston​

“I’m in the business of making people happy through food”

In the early days, Preston developed a passion for the restaurant industry, as his father, Richard Yoke, launched The Egg and I in 1998. Under his father’s guidance, Preston underwent comprehensive training, immersing himself in all aspects of both front-of-house and back-of-house operations.

After dedicating five years to working alongside his father, Preston seized the chance to pursue higher education at Western State University. Concurrently, he honed his culinary skills as a line cook at the CB South General Store in Crested Butte, CO. It was during this period of balancing academics and kitchen duties that Preston discovered his true calling in life – cooking.

Between 2006 and 2008, Preston ascended to the position of Head Chef at The Trough Steak and Seafood in Gunnison, CO. After departing from Gunnison, Preston assumed the role of sous chef at Argyll in Cherry Creek, CO, playing a pivotal role in the restaurant’s opening. After Argyll earned the title of Best New Restaurant, Preston found himself craving even more fulfillment from his culinary pursuits.

Choosing to embark on a culinary journey, Preston took on the role of a culinary apprentice at the prestigious Broadmoor Hotel and Resort in Colorado Springs, CO. It was during his tenure at the Broadmoor that Preston’s passion for the culinary arts flourished. Following the completion of the ACF apprenticeship, he ventured into Denver’s culinary scene, contributing his skills to some of the city’s finest establishments, such as Cholon and Old Major.

Beyond mere ingredients and technique, the essence of a great meal lies in the personal touch a chef imparts to the preparation. Preston, embodying the qualities of enjoyment, anticipation, spontaneity, and a willingness to experiment, infuses his cooking with a part of himself. This philosophy came to life in October 2016 when Preston unveiled his original culinary concept, the Mile High Cajun Food Truck, pouring his passion and creativity into every dish

Mile High Cajun swiftly became a sensation in Denver; however, Preston found himself yearning for the intimate ambiance and mountain vibes reminiscent of Gunnison. After four successful years, he sought a fresh opportunity for the food truck. In 2021, Preston and Mile High Cajun embarked on a new chapter, relocating to Alpine, WY, in pursuit of new horizons and culinary adventures
